About the position

The Head Chef at Beta Academy is responsible for developing, planning, and implementing recipes and menu items for school meals. This role is crucial in ensuring that the meals provided meet the nutritional needs of students while also adhering to the school's concept and target audience. The Head Chef will report directly to the District's Child Nutrition Director and will be expected to maintain compliance with child nutrition program standards and integrity. This position is part-time and contracted, with hours varying from July 29th, 2024, to September 5th, 2025. In this role, the Head Chef will oversee staff and production related to all meal programs, including grab-and-go meals, field trip meals, traditional breakfast and lunch, special diets, and catering. The Head Chef will create and develop menus that align with the school's mission and ensure that all menu items are prepared according to established policies and procedures. The position requires the ability to work in a fast-paced environment while providing excellent customer service and resolving conflicts under pressure. The Head Chef will also be responsible for monitoring inventory levels, tracking usage, and ordering supplies as needed. Maintaining cleanliness and sanitation in the kitchen and serving areas is essential, as is the ability to perform various housekeeping duties. The Head Chef will assist in training staff and may act as an on-call substitute when necessary. Certification requirements include holding an HCHD Food Managers Certificate or obtaining one within 60 days of employment, along with completing annual USDA Professional Standard training.

Responsibilities

  • Develop, plan, and implement recipes and menu items for school meals.
  • Oversee staff and production related to all meal programs (grab n go, field trip meals, traditional breakfast/lunch, special diets, catering, etc.).
  • Maintain child nutrition program compliance and program integrity.
  • Create and develop menus that align with the school's concept and target audience.
  • Assist in coordinating events, student taste tests, and staff training.
  • Ensure all menu items are prepared according to established policies and procedures and in sufficient quantities to satisfy volumes.
  • Ensure presentation of all menu items adheres to established standards.
  • Serve all menu items using established departmental policies and procedures.
  • Monitor inventory levels, track usage, and order supplies if needed.
  • Clean kitchen and serving area continually.
  • Maintain the appearance of all equipment and serving counters.
  • Assist in cleaning the kitchen area, equipment, and utensils to maintain sanitation codes; wash pots, pans, and serving utensils by hand.
  • Perform various housekeeping or janitorial duties in the kitchen and dining areas, such as sweeping, mopping, washing, and sanitizing tables and chairs.
  • Perform other related duties required by the CNP Director and/or designee.
  • Act as an on-call substitute when applicable.

Requirements

  • Must hold an HCHD Food Managers Certificate or obtain one within 60 days of employment.
  • High School Diploma or equivalent required.
  • Three years of relevant work experience in food service preferred.
  • Must be able to lift 25 lbs or 50 lbs with assistance.
  • Must complete 6 hours of USDA Professional Standard training annually.
  • Expert knowledge of a wide range of kitchen equipment, production, food safety, and sanitation requirements.
  • Proficiency in preparing a multitude of dishes using various cooking methods and ensuring cultural diversity.
  • Familiarity with dietary restrictions and ability to accommodate special dietary needs.
  • Ability to effectively manage kitchen operations and conduct staff training days.
  • Knowledgeable with software applications including PrimeroEdge or other menu planning nutrition analysis software.

Nice-to-haves

  • At least 2 years of relevant experience preferred.
  • High School/Trade School degree preferred.
