About the position

The Bakery General Manager plays a pivotal role in supporting Tatte's mission to inspire, care for, and nurture life every day. This position holds overall responsibility for bakery production and logistical operations, ensuring alignment with Tatte's core values and brand essence. Reporting directly to the VP of Bakery Operations, the Bakery General Manager is tasked with overseeing production planning and management, enhancing productivity and efficiency, ensuring food safety, and fostering a safe and engaging work environment for team members. This role also encompasses inventory management, quality assurance, logistics, customer service, and compliance with Tatte's policies and government regulations. As a strategic business leader, the Bakery General Manager is responsible for maintaining the integrity of the Bakery Pilar within Tatte's brand essence. This includes supporting the VP of Bakery Operations and the Manager of Bakery Innovation and Commercialization in the overall Bakery business strategy and related key initiatives. The role requires a keen focus on the Bakery's profit and loss (P&L) while safeguarding Tatte's bakery vision and authority. The manager must monitor bakery capabilities and capacity to ensure that the bakery can meet future market demands while supporting profitable growth. Operational excellence is a key focus for the Bakery General Manager, who must ensure that all bakery operations departments are adequately staffed and trained to maintain an uninterrupted supply of bakery products. This includes effective scheduling, accurate inventory management, and compliance with safety and sanitation standards. The manager will also support the VP of Bakery Operations in developing processes to eliminate waste and reduce costs without compromising product quality or labor productivity. Regular communication with team members and adherence to crisis management procedures are essential components of this role. The Bakery General Manager must uphold Tatte's culture, values, and diversity, equity, inclusion, and belonging (DEIB) plan while ensuring that bakery team members are properly onboarded, trained, and aware of advancement opportunities. Providing ongoing education and conducting regular performance assessments are vital to maintaining a high-performance team. The manager will also address employee relations issues as needed, in consultation with HR.

Responsibilities

  • Maintain and protect the integrity of the Bakery Pilar in Tatte's brand essence.
  • Support the VP of Bakery Operations and Manager of Bakery Innovation and Commercialization in the overall Bakery business strategy and related key initiatives.
  • Overall responsibility for the Bakery P&L while protecting Tatte's bakery vision, authority, and integrity.
  • Monitor Bakery capabilities and capacity to ensure the Bakery can meet future market needs while supporting profitable growth.
  • Investigate and resolve complaints on quality, product execution, and shelf-life issues or questions.
  • Support the VP of Bakery Operations in implementing and upholding Tatte's Total Quality Management (TQM) systems related to the production and delivery of all bakery items across all channels of business.
  • Ensure all bakery operations departments are properly staffed and trained to ensure uninterrupted supply of all bakery products.
  • Ensure effective and efficient scheduling is occurring for bakery operations departments and that schedules are posted according to standards.
  • Ensure accurate and timely inventories and effective inventory management of raw materials needed for each bakery department.
  • Effectively purchase, receive, and manage the inventory of raw materials and other items necessary to run the Bakery.
  • Ensure effective and efficient logistics to and from cafes, and that all vehicles are maintained properly and operate in compliance with state and federal laws.
  • Ensure Bakery remains in good repair, is properly maintained, and has needed equipment and smallwares.
  • Ensure team members follow safety, sanitation, and cleanliness policies/standards (Tatte, State, and Federal).
  • Support the VP of Bakery Operations and the Manager of Bakery Innovation in developing and implementing processes to eliminate waste or lower structural costs without hurting product quality or labor productivity.
  • Conduct timely management and hourly meetings to ensure effective and accurate communication of all relevant product, operational, and personnel information.
  • Maintain understanding of and ensure team follows crisis management procedures.
  • Live, teach, and uphold Tatte's culture, values, DEIB plan, and team member policies.
  • Ensure bakery team members are onboarded and trained correctly, cross-trained, and understand opportunities for advancement.
  • Provide ongoing education and training opportunities for Bakery team members.
  • Conduct regular 'heart checks' with all team members and maintain effective relationships with all bakery managers and team members.
  • Provide direct and clear feedback to direct reports relating to performance and document when appropriate.
  • Ensure all performance appraisals and talent assessments are completed on a timely basis.
  • Address employee relation issues and consult HR as needed.

Requirements

  • Valid driver's license and acceptable driving record.
  • 3-5 years of experience leading a food manufacturing plant.
  • 2 years of culinary experience (preferably in pastry or baking).
  • Deep understanding and effective management of regulatory standards (e.g., OSHA, FDA inspections, Health, EPA, City and County Inspectors).
  • Familiar with Good Manufacturing Practices.
  • Experience with implementing and maintaining quality systems and programs.
  • Experience building and mentoring high-performance teams.
