About the position

The Bakery Production Manager is responsible for leading the culinary operations of a well-established bakery, ensuring the production of high-quality baked goods while maintaining a clean and efficient kitchen environment. This role involves overseeing production schedules, managing team development, and driving financial performance through effective cost management and inventory control.

Responsibilities

• Lead the culinary operation and manage kitchen efficiency to produce high-quality baked goods.
• Run the kitchen in accordance with the Excellent Log and adhere to production schedules.
• Ensure compliance with quality standards, SOPs, and recipes.
• Oversee purchasing, receiving, and food storage processes.
• Maintain a clean and sanitary kitchen environment according to health department standards.
• Train and develop team members, ensuring proper training trackers are followed.
• Provide ongoing feedback and conduct formal reviews for team members.
• Manage financial performance by achieving cost of goods percentages and building efficient labor schedules.
• Drive production and labor schedules in line with sales forecasts to minimize waste.

Requirements

• Associate degree in Culinary, Baking, or Pastry Arts preferred.
• 2-3 years of experience managing production of baked goods and pastries for retail with at least $4.0 million in sales.
• Experience managing a team of over 30+ employees.
• Two years of previous managerial or supervisory experience of teams from 25-40.
• Ability to train, coach, and support team members effectively.
• Exposure to financial controls and accountabilities.
