About The Position

As a Cheese Maker Artisan at the picturesque Carmel Valley Ranch, you will craft exquisite cheeses using traditional methods, adding a touch of artisanal charm to the culinary experience of our guest. Will be responsible for production of cheese in the vat, including, but not limited to ingredient measuring, mixing, temperature application and verification, helping cut vats of curds, push down vats of curds, flip forms, take cheese out of forms and place on carts, moving carts of cheese into brine room and placing in brines, and pulling cheese out of brines.

Responsibilities

  • Processing of various products made from CVR goat milk as well as milk from other sources.
  • Flexibility with production schedule for the various milk products, creating recipes for the various milk products, and training creamery employees in the production of these products.
  • Keeping all necessary records as required by the U.S. Dept. of Agriculture.
  • Up to date knowledge of USDA creamery standards for sanitation and implementing of these standards.
  • Ability to interact with guest on a daily basis and provide guest with the art of artisanal cheesemaking.
  • Maintaining a strict quality control of all milk products that are produced in the creamery.
  • Responsible for keeping a Clean and sanitized work area.
  • Responsible for maintaining knowledge of chemicals and their usage for both manual cleaning and CIP cleaning procedures for Pasteurizer, Silos, and vats.
  • Responsible for communication with supervisor when production issues arise.
  • Responsible for accurate documentation on Make Sheets, Chart Recorders and temperature logs as applicable.
  • May be responsible for various maintenance activities, as qualified, and as assigned. Cleaning and sanitizing area and tools as required.
  • May be responsible for occasional sampling of Milk Silos.
  • Responsible for operation of pH meter.
  • Ensure that all opening, closing and side work duties are completed to standard before signing out.
  • Be aware of any shortages and plan before the item runs out.
  • Maintain the cleanliness of the creamery.

Benefits

  • Wage range between $22-$24 per hour.
