About The Position

The Chef de Cuisine at Hotel Polaris will play a crucial role in shaping the culinary experience at the new hotel located at the U.S. Air Force Academy. This position involves leading the culinary team, developing innovative menus, and ensuring exceptional guest experiences while maintaining high standards of food quality and safety. The Chef will collaborate with various stakeholders to align the culinary vision with the hotel's overall goals and community engagement initiatives.

Requirements

  • Culinary education or 2-4 year degree preferred.
  • Prior hospitality culinary experience required.
  • Restaurant opening experience preferred.
  • Experience in a comparable AAA Four Diamond/Four Star hotel or higher is highly desired.
  • InfoG software, Open Table, and Craftable experience preferred.
  • Proficient working knowledge of Microsoft Office applications.

Responsibilities

  • Maintain a commitment to customer service and guest satisfaction.
  • Create service standards and training for the department.
  • Manage and provide leadership to the Hotel Polaris culinary team.
  • Collaborate with the culinary team and Executive Chef to develop new seasonal food menus responsive to the local market, including banquet and PDR menus.
  • Prepare forecasts and departmental budgets.
  • Develop programs and events to drive business and connect with the community.
  • Cultivate strong relationships within the community.
  • Conduct monthly staff meetings to include ongoing training and safety classes.
  • In collaboration with the Director of Restaurants, responsible for the service standards of the outlets.
  • Establish par levels for supplies and equipment.
  • Foster strong relationships with all vendors.
  • Monitor and maintain the outlets' systems and equipment to ensure their optimum performance.
  • Develop and implement controls for expense management.
  • Implement strategies to continually improve revenues.
  • Ensure adherence to all Health Department requirements.
  • Provide prompt follow-up to all guest and owner concerns.
  • Maintain a safe and pleasant work environment.
  • Work closely with the F&B buyer to ensure proper cost control and quality product.
  • Attend appropriate resort, division, and department meetings.
  • Utilize labor management tools to schedule and control labor costs.
  • Offer a warm and sincere welcome/farewell for all guests and owners, including the use of guest names & maintaining good eye contact.
  • Maintain an up-to-date working knowledge of all hotel amenities as well as any special events.
  • Interact with resort staff in a professional manner, assisting other departments with necessary information.
  • Always maintain a professional demeanor and attitude.
  • Communicate all pertinent information to the outlets team.
  • Maintain constant awareness of safety issues, (i.e. broken glass, frayed electrical cords, leaks, broken locks, and suspicious persons).
  • Ensure proper handling, cleaning, and sanitation of equipment, china, glass, and silver.
  • Remain alert, courteous, and helpful to the guests and colleagues at all times.
  • Report to the Executive Chef and collaborate with the Hotel Polaris F&B management team.
  • Work within the brand guidelines and the culinary philosophies for the property.
  • Work with OpenTable, consistently monitoring guest feedback and working on ways to improve.
  • Work using KPIs to drive team member engagement and providing regular team member reviews.
