About the position

The Chef de Cuisine at The Alexandrian and Morrison House Hotels is responsible for managing the kitchen operations at the King & Rye restaurant. This role involves overseeing food production, preparation, and presentation while ensuring compliance with health and safety standards. The ideal candidate will foster a culture of excellence and service, manage kitchen staff, and contribute to menu development, all while maintaining profitability and quality in food service.

Responsibilities

  • Manage the kitchen staff in daily food production, preparation, and presentation for the restaurant and room service.
  • Oversee daily kitchen operations and monitor food and labor costs.
  • Assist the Executive Chef in creating and implementing menu and production changes.
  • Ensure a safe and sanitary work environment that meets all standards and regulations.
  • Manage human resources in the kitchen, including hiring, training, and performance reviews.
  • Schedule and manage kitchen maintenance and sanitation to ensure compliance with health standards.
  • Monitor, analyze, and control labor and food costs, preparing reports to ensure budget adherence.
  • Promote the Accident Prevention Program to minimize liabilities.

Requirements

  • High school diploma or GED.
  • 1 to 2 years of culinary experience in a related position.
  • Advanced knowledge of food management principles and practices.
