Responsibilities

  • Prepare menu items in accordance with forecasted quantities, diet types, and textures, following established recipes.
  • Provide leadership in the kitchen; train and direct food service workers when needed.
  • Communicate and line out duties for food service workers to assist in the preparation of menu items and trays.
  • Report any work rule violations, food safety issues, food storage issues, or equipment issues to the kitchen supervisor and manager of nutrition services.
  • Provide recommendations for improvements to supervisors to enhance workflow and food quality.
  • Check inventory based on forecasted menus and communicate inventory needs to the inventory technician.
  • Use time management to ensure foods are cooked and delivered on time for each meal.
  • Maintain sanitation and infection control according to established procedures.
  • Direct the disposition of leftovers, labeling and storing food to prevent spillage and contamination.
  • Clean food preparation areas and equipment, including crockery and cutlery.
  • Perform other duties as assigned.

Requirements

  • High School Diploma or Equivalent.
  • 1 year working in a professional kitchen.
  • Alaska Food Workers Card within 90 days of employment.
  • Knowledge of institutional food preparation standards and practices.
  • Knowledge of menu planning, recipe usage, and quantities.
  • Ability to work with food preparation equipment and tools safely.
  • Ability to foster teamwork among staff.
