Responsibilities

  • Prepare menu items according to forecasted quantities, diet types, and textures, following established recipes.
  • Provide leadership in the kitchen; train and direct food service workers as needed.
  • Communicate with kitchen supervisor and nutrition services manager regarding work rule violations, food safety issues, and equipment problems.
  • Offer recommendations for workflow and food quality improvements to supervisors.
  • Proactively check inventory based on forecasted menus and communicate needs to the inventory technician.
  • Use time management to ensure timely cooking and delivery of meals.
  • Maintain sanitation and infection control according to established procedures.
  • Direct the disposition of leftovers, ensuring proper labeling and storage to prevent contamination.
  • Clean food preparation areas and equipment, including crockery and cutlery.
  • Perform other duties as assigned.

Requirements

  • High School Diploma or Equivalent
  • 1 year working in a professional kitchen
  • Alaska Food Workers Card within 90 days
  • Knowledge of institutional food preparation standards and practices
  • Knowledge of menu planning, recipe usage, and quantities
  • Ability to work with food preparation equipment and tools safely
  • Ability to foster teamwork among staff
