About the position

The Correctional Food Service Officer II is responsible for supervising and ensuring the custody of inmates in food preparation and service areas at Franklin Correctional Center. This role involves overseeing inmate workers in various food production activities, including cooking, baking, and serving meals to the inmate population. The officer must maintain sanitary food handling practices, manage inventory, and ensure compliance with nutritional standards while also completing necessary training in CPR and self-defense.

Responsibilities

• Supervise and maintain custody of inmates in food preparation and service areas.
• Oversee inmate workers engaged in cooking, baking, and serving food.
• Communicate effectively both verbally and in writing.
• Input and comprehend computer data related to food service operations.
• Secure and maintain kitchen equipment and supplies.
• Read, comprehend, and calculate menus for food preparation.
• Observe and enforce sanitary food handling practices.
• Understand and apply knowledge of food nutritional values.
• Inventory and rotate food stock as necessary.
• Complete required training in CPR, firearms, and unarmed self-defense.

Requirements

• High school diploma or GED and two years of experience in institutional food preparation and food services, or management of commercial food service operations, or as a Correctional Officer; or an equivalent combination of education and experience.
• Documented knowledge of large-scale food production and supervision of offenders.
• Eligibility for certification by the North Carolina Criminal Justice Education & Training Standards Commission.
