About the position

The Culinary Executive Sous Chef serves as the second in command in the kitchens of a foodservice establishment, ensuring the delivery of nutritious, safe, and visually appealing food while maintaining a sanitary work environment. This role involves menu planning, budget preparation, and maintaining records related to payroll and food costs, alongside training staff in cooking methods and quality standards.

Responsibilities

  • Ensure all kitchens provide nutritious, safe, and visually appealing food.
  • Maintain a safe and sanitary work environment for all employees.
  • Plan menus and prepare budgets.
  • Maintain payroll, food cost, and other records.
  • Train employees in cooking methods, presentation techniques, and portion control.
  • Establish quality standards for food preparation.

Requirements

  • Must be 18 years of age or older upon employment.
  • Degree from a postsecondary culinary arts training program.
  • A minimum of two (2) years as a Sous Chef and five (5) years in a food preparation position.
  • Excellent interpersonal, customer service, communication, coaching, team building, and problem-solving skills required.
  • Extensive knowledge of seafood, protein, and poultry.
  • Computer literate in all Microsoft Office applications and automated restaurant systems.
