About the position

Culinary Services Division (CSD) at Montana State University is seeking a Culinary Production Manager who is enthusiastic about the dynamic and fast-paced food industry. This position plays a crucial role in managing culinary production and staff for various dining concepts within the division, which serves over 18,000 customers daily. The CSD is an integral part of campus life, providing a diverse range of cuisines and a welcoming atmosphere for students to gather, study, and relax. The division includes multiple dining facilities, a commissary kitchen, retail operations, and catering services, all aimed at enhancing the overall college experience. As a Culinary Production Manager, you will be responsible for supervising culinary production and managing both full-time and temporary staff. This includes hiring, training, and evaluating staff performance, as well as addressing any disciplinary issues that may arise. You will also handle various administrative tasks related to inventory and ordering, ensuring that all culinary operations run smoothly and efficiently. Daily quality inspections of food production will be part of your duties, along with ensuring compliance with safety and sanitation guidelines as mandated by the FDA and MSU's Registered Sanitarian. In addition to overseeing daily operations, you will participate in culinary production for special events, including Bobcat Football games. Your role will require you to actively contribute to the team and perform other duties as needed to support the department's mission. The ideal candidate will possess a strong commitment to customer service, creativity in culinary arts, and the ability to work effectively in a team-oriented environment. You will need to navigate strict operating guidelines related to procurement, contracting, and food safety while maintaining high standards of food quality and presentation.

Responsibilities

  • Manage the production and staff for assigned culinary concepts.
  • Supervise culinary production and staff, including hiring, training, and evaluating performance.
  • Perform administrative tasks related to inventory and ordering.
  • Conduct daily quality inspections of food production and ensure compliance with safety and sanitation guidelines.
  • Ensure compliance with FDA codes and MSU's sanitation guidelines for food handling and storage.
  • Participate in culinary production for special events, including Bobcat Football games.
  • Contribute to the team by performing additional duties as needed.

Requirements

  • Progressively responsible experience in high volume food production and/or multi-unit kitchen management.
  • Experience supervising and training staff.
  • Proficient experience using computers and various software packages.

Nice-to-haves

  • Advanced degree or certificate in hospitality, culinary arts, or related fields.
  • Experience with a food service management system.
  • Experience in menu and recipe development.
