About the position

The Culinary Supervisor at Bear Mountain, part of Big Bear Mountain Resort and Levy, is responsible for overseeing food-service associates, ensuring compliance with policies and procedures, and maintaining high standards of food quality and safety. This role involves training staff, managing food inventory, and providing excellent customer service during meal periods.

Responsibilities

• Directly supervise food-service associates in accordance with policies, procedures, and applicable laws.
• Train employees and plan, assign, and direct work.
• Appraise performance and reward or discipline associates as necessary.
• Address complaints and resolve problems effectively.
• Advise management on purchasing requirements to minimize waste and avoid product shortages.
• Use approved food recipes and production standards to ensure proper quality and serving temperatures.
• Operate and clean equipment according to department procedures after each use.
• Store, label, and date food items according to policy, maintaining established food rotations to minimize spoilage.
• Follow HACCP guidelines to ensure the quality and safety of the food supply.
• Help serve meals and remain present during scheduled meal periods to receive customer feedback.
• Perform other duties as assigned.

Requirements

• Experience in food service or culinary management.
• Strong leadership and training skills.
• Knowledge of food safety and sanitation practices.
• Ability to manage inventory and minimize waste.
• Excellent communication and customer service skills.
