About the position

The Dietary Supervisor at Hemet Hills is responsible for overseeing food preparation and service, ensuring that meals are safe, appetizing, and meet the dietary needs of residents in accordance with physician orders. This role involves managing dietary staff, maintaining compliance with health regulations, and coordinating with nursing services to provide quality dietary care.

Responsibilities

  • Direct and participate in food preparation and service of safe and appetizing food.
  • Maintain cost and work to meet budget guidelines.
  • Plan and assist in preparation and service of holiday and special meals.
  • Direct and supervise all dietary functions and personnel.
  • Hire, orient, train, discipline, and terminate dietary employees as necessary.
  • Ensure proper storage and handling of food and supplies in compliance with regulations.
  • Process new diet orders and changes from nursing staff and keep diet cards updated.
  • Maintain sufficient staff to provide dietary services to the facility.
  • Assess resident food preferences and allergies.
  • Prepare dietary staff schedules and address schedule changes.
  • Maintain kitchen and food storage area in a safe, orderly, clean, and sanitary manner.
  • Transmit orders for appropriate food and supplies.
  • Document and notify Dietician of menu changes.
  • Participate in QA and IDT meetings as assigned.
  • Check trays for accuracy before delivery.
  • Inspect Dietary Department regularly for safety and sanitation.
  • Plan and present in-service education programs for the Dietary Department.
  • Investigate on-the-job injuries and correct problems or retrain employees as necessary.
  • Ensure compliance with all federal, state, and local regulations.
  • Coordinate dietary services with nursing services and activities director.
  • Complete monthly nutritional notes for residents at nutritional risks.
  • Visit residents to conduct nutritional assessments and screenings.

Requirements

  • High school diploma or equivalent.
  • Graduate of an approved dietary manager's course that meets state and federal care regulations.
  • Preferably one year of experience in a long-term care facility dietary department.
  • Ability to read technical procedures and comprehend policy manuals.
  • Ability to read recipes and prepare accordingly.
  • Ability to effectively present information and respond to questions from managers and employees.
  • Ability to apply concepts such as fractions, percentages, ratios, and proportions to practical situations.
  • Ability to solve practical problems and interpret a variety of instructions.

Nice-to-haves

  • Knowledge and experience with PCC preferred.
  • Must maintain all required continuing education/licensing.
