About the position

At Ciccio Cali, our Dish Team is at the heart of our culinary operations, embodying our commitment to fresh, high-quality food and a vibrant culture. We pride ourselves on receiving fresh produce and products daily, ensuring that our dishes are crafted with the utmost care and attention to detail. As a member of the Dish Team, you will play a crucial role in preparing and prepping high volumes of vegetables and proteins, creating homemade sauces and marinades, and maintaining the cleanliness and organization of the kitchen. Your responsibilities will include setting up the kitchen for success, ensuring that all necessary dishes, pots, and pans are available for the shift, and properly rotating produce and food orders using FIFO methods. You will also be responsible for maintaining pars and counts, communicating any opportunities for improvement with the Chef or Manager, and adhering to food safety and sanitation standards. In addition to your culinary duties, you will be expected to use various kitchen machinery, including knives, ovens, grills, gas stoves, food processors, blenders, dish machines, and triple sinks. Keeping your station clean and organized is essential, as is following recipes and food specifications to ensure quality and consistency in every dish. Responsibilities

  • Setting the kitchen up for success, ensuring there is enough dishes and pots and pans to sustain the shift.
  • Preparing and prepping high volumes of vegetables and protein, making homemade sauces and marinades.
  • Putting away and rotating produce and food orders using FIFO methods accordingly.
  • Maintaining pars and counts of responsible times, communicating any opportunities with Chef/Manager.
  • Using kitchen machinery including knives, ovens, grills, gas stoves, food processors, blenders, dish machines, and triple sinks.
  • Maintaining clean dishes/utensils, monitoring water temperatures and chemical usage.
  • Cleaning and maintaining floors in the BOH and FOH including restroom maintenance.
  • Properly complying with food safety and sanitation standards, keeping certificates up to date.
  • Following recipes and adhering to food specs, ensuring quality and consistency.
  • Properly opening/closing and cleaning your station to set yourself and other team members up for success.
  • Performing additional responsibilities as requested at any time.

Requirements

  • Must be 18 years of age or older.
  • Previous culinary experience with a strong passion for food, people, and the planet.
  • Team player with a good attitude and works with a sense of urgency.
  • Ability to read and follow written recipes.
  • Reliable transportation to and from work.
  • Ability to work in both hot and cool environments.
  • Able to lift at least 20 pounds and frequently squat and bend.
  • Self-accountable in upholding high standards.
  • Able to work in a fast-paced setting for up to 8 hours daily, or as needed.
  • Willingness to learn and develop ServSafe certification required (may obtain after employed).
  • A genuine passion for food!
