About the position

The Evening Culinary Arts Sous Chef is responsible for providing instructional support and excellent food quality and customer service in District 21, our full-service restaurant. This individual will provide leadership, assist with supervision to staff and students and is considered a leader for the restaurant. Responsibilities

  • Maintains a kitchen climate conducive to learning.
  • Implements & executes a standard menu designed to use seasonal, local, and responsibly produced produce and meats.
  • Manages the preparation of meals and food to meet the specifications of guests in a timely manner.
  • Ensures restaurant staff and students adhere to set standards, procedures, department rules, and sanitation requirements.
  • Monitors the proper use of kitchen knives and equipment such as grills, ovens, steamers, and warmers in food preparation.
  • Manages the kitchen inventory and ensures supplies are fresh and of high quality.
  • Ensures proper food temperatures during all stages of food production and storage.
  • Keeps all front and back workstations and kitchen equipment clean, organized, and sanitized.
  • Implements and manages kitchen opening, closing, and other side duties assigned.
  • Cross utilizes and finds creative ways to utilize product to promote a financially healthy restaurant.
  • Assists in instruction of adult students in the restaurant kitchen using competency-based instruction and effective teaching practices.
  • Provides instruction and supervision in the restaurant lab and classroom.
  • Evaluates student live work and performance check-offs according to established food standards of quality and presentation.
  • Mentors students through demonstration and constant coaching.
  • Instructs students in safety procedures necessary for the safe operation of equipment and the care of materials, supplies, furniture, and facilities.
  • Inspires students and staff to uphold all customer service standards.
  • Exhibits strong interpersonal skills to resolve conflicts.
  • Ability to communicate effectively with students, staff, and guests.
  • Resolves any food quality and service complaints.
  • Maintains and updates the POS and reservation systems as needed.
  • Responsible for sharing inventory needs to the chef.
  • Responsible for managing daily reconciliation of transactions and deposits.
  • Provides content for social media engagement.
  • Attends and participates in staff development activities to include computer training and other school or departmental training initiatives.
  • Responsible for the general cleanliness and sanitation of the assigned work area(s) and assists in the general cleanliness and sanitation of the kitchen.
  • Ability to be present on the job as described under working conditions and contract details.
  • Other duties as assigned.

Requirements

  • High school diploma with a minimum of three (3) years of formal culinary experience as a sous chef or higher at a fast-paced restaurant or hotel kitchen required.
  • Program Completion in Culinary Arts, Pastry, Hospitality or another related field highly preferred.
  • Must hold or be willing to obtain ServSafe Manager Certification.
  • Excellent customer skills required.
