About the position

The Sous Chef at Gordon Ramsay Steak plays a crucial role in overseeing kitchen operations, ensuring high-quality food production, and managing kitchen staff. This position is responsible for menu planning, staff training, and maintaining food safety standards while creating a positive work environment. The Sous Chef reports directly to the Property Executive Chef and Food and Beverage Director, and is expected to uphold the highest standards of culinary excellence and compliance with regulations.

Responsibilities

  • Supervise the activities of all Gordon Ramsay Steak staff including scheduling and maintaining inventory.
  • Produce food for the restaurant and other events in the casino meeting/conference spaces.
  • Ensure that all food prepared is nutritious, safe, eye appealing, and properly flavored.
  • Plan menus and establish quality standards for menu items and food production practices.
  • Train kitchen personnel in cooking methods, presentation techniques, and portion control.
  • Interview, hire, evaluate, and discipline kitchen personnel as appropriate.
  • Maintain payroll records and control food costs by establishing proper storage requirements and standardization of recipes.
  • Provide safety training in lifting, carrying, hazardous material control, and chemical control.
  • Lead employees by creating a positive, supportive environment where talents and skills are exchanged and enhanced.
  • Champion a commitment to honesty, integrity, and responsible corporate behavior.

Requirements

  • Degree from a post-secondary Culinary Arts School preferred or required.
  • A minimum of 5 years as a Sous Chef plus 3 years in another food preparation position preferred or required.
  • Extensive knowledge of food and beverage products.
  • Ability to perform basic/intermediate math skills including measurement of products.
  • Ability to read, write, and understand English.
  • Proven performance in implementing and maintaining food production operational standards.
  • Ability to uphold and demonstrate the highest level of integrity in all situations.

Nice-to-haves

  • Experience in a high-volume kitchen environment.
  • Knowledge of food safety regulations and compliance standards.
