About the position

The Executive Chef at Hilton Shreveport is responsible for overseeing the Food and Beverage department, managing kitchen operations, and ensuring high-quality food service for hotel restaurants, banquets, and functions. This leadership role requires collaboration, staff management, and adherence to safety and sanitation standards, with a focus on guest satisfaction and productivity.

Responsibilities

  • Supervise and execute the Food & Beverage team and kitchen operations.
  • Hire, train, schedule, support, review, discipline, and terminate employees.
  • Train and manage all kitchen employees, focusing on their development.
  • Post weekly schedules for kitchen employees.
  • Complete payroll reports for bi-monthly payroll.
  • Develop diverse menus for the hotel.
  • Monitor food presentation and quality served to guests.
  • Plan and prepare food items for catering functions, adhering to safety guidelines.
  • Maintain quality and consistency in food delivery and standards.
  • Assist in planning, writing, and pricing food menus.
  • Order and receive all Food & Beverage items.
  • Enforce sanitation laws and safety standards in the kitchen.
  • Maintain adequate supplies and minimize waste in the kitchen.
  • Ensure proper food storage and serving temperatures.
  • Prepare annual departmental budget with the General Manager and Regional Controller.
  • Monitor and control departmental expenditures to meet operational standards.
  • Maintain food and labor costs effectively.
  • Ensure proper maintenance of kitchen equipment.
  • Regularly inspect kitchen areas for sanitary conditions.
  • Adapt to marketplace changes and guest needs.
  • Use market research to develop new products.
  • Order and manage vendor relationships professionally.
  • Conduct regular departmental operations meetings, including safety meetings.
  • Ensure safe work practices and compliance with safety regulations for kitchen employees.
  • Attend all mandatory meetings as directed.

Requirements

  • Minimum of 2 years experience as an Executive Chef.
  • Excellent knowledge of back-of-house (BOH) systems.
