About the position

The Executive Chef will oversee the operations of the Commissary Kitchen and manage culinary activities across multiple Vietnamese restaurant locations. This role is crucial for maintaining high standards of food quality, staff training, and compliance with health regulations, while also fostering a collaborative kitchen environment.

Responsibilities

  • Oversee all kitchen operations, including food preparation, cooking, and presentation.
  • Supervise & train kitchen staff, providing guidance and training to ensure high performance.
  • Develop seasonal specials and execute the roll out to all individual locations.
  • Oversee inventory and logistics manager.
  • Communicate with the FOH about allergens.
  • Ensure compliance with health and safety regulations within the kitchen environment.
  • Monitor food production processes to maintain quality control and consistency.
  • Travel to each location to ensure food quality.
  • Assist with the training of individual location Kitchen Managers.

Requirements

  • Proven experience as an Executive Chef or in a similar culinary leadership role.
  • Strong skills in supervising kitchen staff and managing kitchen operations effectively.
  • Expertise in menu planning and food production techniques.
  • Knowledge of Vietnamese food.
  • Ability to work collaboratively within a team environment while fostering a positive atmosphere.
  • Excellent organizational skills with attention to detail in all aspects of food preparation.

Nice-to-haves

  • Familiarity with dietary restrictions and the ability to create accommodating meal options is preferred.
  • Passion for cooking with a creative flair for developing new dishes.
