About the position

The Executive Chef at Capital Canyon Club is responsible for overseeing all culinary operations, ensuring high standards of food quality and service. This role involves direct supervision of food preparation, menu planning, and maintaining food safety standards, while also managing kitchen staff and collaborating with other departments for special events.

Responsibilities

  • Incorporates safe work practices in job performance.
  • Completes market lists and orders necessary items, inspecting foods received from markets.
  • Develops standard recipes for all dishes to ensure proper portion control and quality.
  • Directly supervises food preparation, cost quality, quantity inventories, and menu planning.
  • Assists line cooks during peak hours.
  • Participates in interviewing and hiring applicants, and assists with training programs.
  • Develops new cooking methods and maintains contact with other chefs for culinary improvement.
  • Assists in preparing inventories and budget forecasts, revising work schedules as needed.
  • Coordinates with other departments for special functions and outings.
  • Maintains regular and reliable attendance.

Requirements

  • AA degree or Culinary degree.
  • Minimum of two years' experience as Executive Sous Chef and/or Executive Chef.
  • Food Safety and Sanitation Training.
  • Knowledge of accepted sanitation standards and applicable health codes.
