About the position

As the Executive Sous Chef at MGM Resorts International, you will play a crucial role in assisting the Executive Chef in leading the kitchen team to deliver exceptional dining experiences. This position involves overseeing daily kitchen operations, managing staff performance, and ensuring compliance with health and safety standards while maintaining the high-quality service associated with the MGM brand.

Responsibilities

  • Lead and oversee daily restaurant kitchen operations, including fiscal budgets and labor productivity.
  • Manage scheduling, inventory control, and guest service standards.
  • Execute and develop menu strategies to enhance profitability.
  • Assist the Executive Chef in developing and executing business plans and tactics to achieve goals.
  • Ensure compliance with health, sanitation, and cleanliness standards in the kitchen.
  • Manage Human Resources responsibilities, including hiring, training, and performance feedback.
  • Interact with guests to ensure satisfaction and address any complaints.
  • Collaborate with the service team to ensure a seamless dining experience.

Requirements

  • 2+ years of leadership experience in a high volume, fast-paced kitchen environment.
  • 2+ years of experience in Italian Cuisine.
  • Working background with Collective Bargaining Agreements.
  • Ability to work varied shifts, including weekends and holidays.
  • Ability to lift, carry, and stand for prolonged amounts of time.
  • Bachelor's degree or equivalent experience.
