About the position
The Executive Sous Chef at Bon Appetit Management Company is responsible for supporting the Executive Chef in various operational areas, including menu development, staff training, sanitation, and cost management. This role emphasizes culinary expertise and collaboration with floor managers to ensure a quality dining experience for guests. The position allows for creativity and innovation in food preparation and service, reflecting the company's commitment to outstanding food and service.
Responsibilities
- Assist the Executive Chef with handling cost controls and managing expenditures for the account.
- Assist the Executive Chef with planning and crafting menus.
- Produce and execute catering events.
- Roll out new culinary programs in conjunction with the Company marketing and culinary team.
- Supervise hourly kitchen staff, ensuring adherence to preparation, sanitation, and presentation standards.
Requirements
- A.O.S. Culinary Arts Degree or equivalent experience and culinary certificate required.
- Two years of progressive culinary/kitchen management experience, depending upon formal degree or training.
- Catering experience is a plus.
- High volume, complex foodservice operations experience is highly desirable.
- Institutional and batch cooking experiences are helpful.
- Extensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation.
- Must be experienced with computers, including Microsoft Office (Word, Excel, Power Point), Outlook, E-mail, and the Internet.
- Must be willing to participate in patient satisfaction programs/activities.
- ServSafe certification is highly desirable.
