About the position

The Executive Sous Chef at The Westin Ka'anapali Ocean Resort Villas is responsible for overseeing all culinary operations, including food production for banquets, events, and restaurant services. This role involves managing kitchen staff, ensuring compliance with food safety standards, and enhancing guest satisfaction while maximizing financial performance. The Executive Sous Chef will also play a key role in training and developing culinary staff, maintaining high-quality food standards, and fostering a positive work environment.

Responsibilities

  • Coordinate food production for all banquet, events, and catering operations.
  • Manage and oversee all culinary operations including restaurants, bar, and events.
  • Supervise and develop kitchen staff to ensure high-quality food production.
  • Ensure compliance with food safety and sanitation standards.
  • Monitor guest and associate satisfaction levels and financial performance.
  • Provide guidance and direction to kitchen staff and set performance standards.
  • Participate in budgeting and manage controllable expenses.
  • Develop and implement guidelines for purchasing and receiving food supplies.
  • Interact with guests to gather feedback on food quality and service levels.
  • Conduct interviews and participate in hiring processes for kitchen staff.

Requirements

  • High school diploma or GED with 6 years of culinary experience, or a 2-year degree in Culinary Arts or related field with 4 years of experience.
  • Strong leadership and communication skills to manage kitchen operations and staff.
  • Knowledge of food safety and sanitation standards.
  • Experience in menu development and food presentation standards.
  • Ability to manage kitchen expenses and participate in budgeting processes.

Nice-to-haves

  • Experience in a high-volume kitchen environment.
  • Culinary certifications or specialized training in specific cuisines.
  • Knowledge of local and seasonal ingredients.
