About the position

The F&B Captain at Carolina Vista Lounge is responsible for supervising daily operations of dining outlets, ensuring high levels of service, and managing staff. This role involves hiring, training, scheduling, and overseeing service for all meals, while maintaining the standards set by the resort. The position requires flexibility to work various outlets and shifts within the Food and Beverage Division.

Responsibilities

• Supervise daily operations of dining outlets.
• Hire and train dining outlet employees according to resort standards.
• Ensure proper controls for reservations in dining outlets.
• Set up dining rooms for all meal periods.
• Participate in performance reviews and disciplinary counseling for employees.
• Assign side work and supervise cleaning and stocking assignments.
• Maintain adequate supplies for effective guest service.
• Allocate service stations for meal periods.
• Handle guest concerns in dining outlets.
• Manage payroll and expense control for dining outlets.
• Develop staff from busser to server roles.
• Complete reports in a timely manner, including menus scores and special events summaries.
• Prepare weekly schedules and check resumes for group dining arrangements.
• Order supplies and manage buffet setups.
• Greet and seat guests, ensuring standards of service are met.
• Assist with inventory and respond to P&L statements.

Requirements

• High school diploma or GED required.
• Minimum of two years related experience in food and beverage service or equivalent combination of education and experience.
• Valid driver's license and successful completion of a pre-employment Motor Vehicle Report (MVR).

Nice-to-haves

• Experience with micros and related paperwork.
• Familiarity with ABC laws.
