The Food and Nutrition Manager at Eskaton Village Carmichael is a full-time position responsible for overseeing the overall operation of the Skilled Nursing Facility (SNF) and Assisted Living Unit (ALU) Food Services. This role is crucial in ensuring that the culinary staff operates efficiently and that the nutritional needs of the residents are met with excellence. The manager will work closely with the Director of Culinary Experience, Dining Services Supervisor, and Quality and Compliance Consultants to ensure compliance with health regulations and standards set forth by the health department and county health standards. The position requires the design and implementation of an appropriate menu cycle tailored to the community's needs, with adjustments made as necessary to accommodate resident preferences and dietary requirements. In addition to menu planning, the Food and Nutrition Manager will direct food preparation according to production sheets, recipes, and the specific needs of residents. Responsibilities also include ordering, stocking, and maintaining an appropriate inventory of food and nutrition items, as well as assisting with special catering events. The manager will uphold standards of safety, sanitation, and cleanliness within the Culinary Department, addressing any patient concerns that arise from the Resident Council or individual residents. A key aspect of the role involves assessing each resident's food and nutrition needs, creating care plans in collaboration with the Resident Assessment Instrument (RAI) Process and Interdisciplinary Team (IDT). The Food and Nutrition Manager will also conduct nutritional screenings for residents and participate in weekly care planning and case management meetings with nursing staff. This position requires the development and posting of kitchen work and cleaning schedules to ensure smooth operations within the culinary team.
