About the position

The Food Service Lead - Cook Coordinator is a part-time role at the Minnesota Correctional Facility in Shakopee, responsible for overseeing the preparation and serving of meals while ensuring adherence to safety and sanitation standards. This position involves providing leadership and instruction to offenders in food service operations, ensuring that meals meet quality and nutritional standards. The role requires working approximately 20 hours per week with a rotating schedule, and it plays a critical part in the well-being of incarcerated individuals by providing nutritious meals.

Responsibilities

  • Provide leadership, instruction, and direction to offenders in food preparation and service.
  • Ensure meals meet quality and nutrition standards and service timelines.
  • Monitor and adhere to safety and sanitation standards in the food services area.
  • Oversee the handling, serving, and clean-up of daily meals.
  • Coordinate with department staff to determine specific work schedules.

Requirements

  • Must be at least 18 years old and able to pass a criminal history check.
  • Ability to read, write, and communicate verbally in English.
  • Physical ability to stand, walk, bend, carry, push, and handle items for the majority of the shift.
  • Nine months of full-time food production experience in a high-volume setting, or six months in a correctional environment, or completion of a vocational program in commercial cooking.
  • ServSafe Food Manager Certification (or equivalent) required upon appointment.

Nice-to-haves

  • High School Diploma or GED.
  • Valid Driver's License.
  • Experience working in a correctional or secured environment.
  • Experience directing the work of others in a large food service setting.
  • Two or more years of experience in large volume cooking and food preparation.
  • Knowledge of food values, nutrition, and therapeutic diets.
  • Bilingual in a Spanish, Asian, or African dialect.
