About the position

The Head Chocolatier is responsible for the development of Kohler Original Recipe Chocolate product development, production, quality control, and packaging. This role involves supervising the daily planning and preparations necessary to meet production needs while ensuring that KORC products and quality remain competitive in the premium chocolate retail market with a focus on the end customer. The Head Chocolatier will manage food and labor costs, drive new product development, and oversee production staff, production processes, FDA regulation compliance, equipment sourcing, inventory control, and contribute to decisions affecting the P&L for KORC.

Responsibilities

  • Lead in the planning process of new products.
  • Keep current with trends in the Chocolate industry.
  • Cost out all new menu items to achieve planned food cost goals.
  • Maintain an efficient production schedule and goals.
  • Maintain the schedule of all production equipment.
  • Plan for future production growth needs through equipment and product research.
  • Create an environment that allows associates to exceed customer expectations.
  • Serve as a role model for proper process execution and continuous operational improvement.
  • Conduct monthly all-department meetings to communicate business information.
  • Conduct hourly associate reviews in a fair and timely manner.
  • Assist Controller in determining staffing levels and selection of associates in the absence of KORC General Manager.
  • Lead the coaching and development of associates for future expansion opportunities.
  • Ensure all Standard Operating Procedures are current.
  • Ensure quality and consistency standards are met throughout the manufacturing process.
  • Bid every food product for best price and quality, managing freight expense and inventory timing.
  • Network with other resort chefs for Best Practices and reduction of waste.
  • Achieve budgeted food and labor costs monthly and annually.
  • Lead month-end inventory.
  • Build relationships with vendors and initiate purchasing agreements to reduce food costs.
  • Initiate and maintain vendor relations to stay current with industry trends.
  • Act as a Brand Ambassador and professional representative for KORC.
  • Attend monthly KORC strategy meetings.
  • Establish high standards and uphold quality within the KORC department.
  • Develop and train KORC production associates on proper handling and appearance of chocolates.
  • Stay current with chocolate methodology and drive continuous improvement.
  • Innovate products that exceed customer expectations.
  • Partner with the sales team to ensure high-quality training standards are used for new and existing customers.

Requirements

  • 5+ years of practical experience in a leadership role in production kitchen management.
  • Culinary degree or equivalent apprenticeship program completed in Chocolate/Confectionary Arts.
  • Master Chocolatier designation is preferred.
  • Ability to understand and positively affect P&L statements.
  • Involved in continuing education in the Chocolate/Confectionary Arts.
