Requirements

  • Proven experience: At least 7+ years as a Pastry Chef, including leadership roles, with experience in launching or managing a bakery.
  • Deep business knowledge: Comprehensive understanding of bakery operations, from equipment and layout to sourcing, portions, and product cost management.
  • French pastry expertise: Mastery in classic French techniques, including viennoiserie, entremets, and high-end desserts, with a creative flair for innovation.
  • Leadership and mentorship: Ability to inspire, guide, and develop a team of pastry chefs and support staff.
  • Attention to detail: A meticulous approach to flavor, texture, presentation, and quality control.
  • Adaptability and collaboration: Open-minded and ready to share knowledge, adapt to feedback, and work closely with management to achieve a shared vision.

Nice To Haves

  • Culinary or pastry school certification is preferred, but extensive hands-on experience and a proven track record are essential.

Responsibilities

  • Lead the creation, development, and production of a wide array of high-quality pastries, including croissants, tarts, cakes, and other French-inspired desserts.

  • Oversee all aspects of the bakery kitchen, including equipment setup, ingredient sourcing, inventory management, and food safety compliance.
  • Train, mentor, and manage kitchen staff, fostering a collaborative and high-performing team culture.
  • Collaborate with management to shape the bakery's vision, seasonal menus, and long-term growth strategies.
  • Maintain a consistent standard of excellence in flavor, presentation, and quality.
  • Stay ahead of industry trends and continually push the boundaries of innovation in pastry.
