About the position

The High-Performance Chef at San Diego Wave Fútbol Club is responsible for enhancing player health and performance through the preparation of nutritionally optimal meals and snacks. This role involves collaborating with the Club's Nutritionist to create fresh, local, balanced, and nutrient-dense meals tailored to the specific needs of players and coaches. The chef will oversee menu planning and execution, ensuring that all meals meet high standards of quality and nutrition.

Responsibilities

  • Develop recipes, source, build and implement menus for all player, coach and sporting staff meals, focusing on nutrient-dense foods to optimize health and performance.
  • Assist in establishing a culinary budget, including menu costing, inventory tracking, and invoice processing.
  • Implement procedures for serving food, as well as rotating and storing food within coolers, freezers, dry storage, etc., applying a FIFO approach.
  • Establish relationships with quality, nutritional-minded vendors to procure seasonal, local and sustainable ingredients.
  • Ensure prep and execution of menu is seamless.
  • Manage part-time staff to assist with kitchen responsibilities, including dishwashing, food running, and cleaning.

Requirements

  • Culinary school or equivalent work experience
  • Minimum 2 years of BOH management experience
  • ServSafe Certification required
  • Ability to handle stress under pressure
  • Willingness to maintain a clean, healthy, and safe working environment
  • Ability to coordinate multiple activities with attention to detail
  • Ability to work independently, with minimal supervision
  • Ability to be flexible with job demands and open-minded when being asked to complete tasks
  • Ability to operate and use all equipment necessary to run the restaurant
  • Ability to move or handle equipment throughout the restaurant generally weighing 0-50 pounds
  • Ability to work varied hours/days as business dictates
  • Ability to stand for up to 8-10 hours a day
  • Must be able to tolerate potential allergens: peanut products, egg, dairy, gluten, soy, seafood and shellfish
