About the position

The Hospital Cook position at Sussex Rehab is a full-time evening role responsible for the preparation of food for patients and cafeteria services, adhering to local, state, and federal standards. The cook must ensure that all food is prepared in compliance with sanitation policies and is responsible for various related duties as assigned. This role requires a commitment to quality food production, effective communication with team members, and a focus on maintaining high standards of cleanliness and safety in the kitchen environment. In this position, the cook will prepare and cook a variety of foods and desserts, following established standardized recipes to ensure quality results. The cook will also be involved in menu planning, reviewing daily menus, and coordinating with other cooks regarding supplies and ingredient preparation. Additionally, the cook will assist in checking food deliveries, processing invoices, and ensuring that all items are accounted for. Regular attendance at meetings with the Director and Dietitian is expected to discuss progress and changes in food production. Leadership responsibilities include providing guidance in the absence of the Food Service Team Leader/Cook and consulting with the Clinical Dietitian as needed. The cook will also assist in serving food on the patients' tray line, ensuring that food plates are garnished appropriately, and maintaining sanitation standards in the production area. This includes conducting daily inspections of food storage, checking inventory levels, and submitting food purchase requisitions as necessary. The cook will be responsible for conducting food temperature checks and maintaining a clean and organized work environment.

Responsibilities

  • Prepares and cooks food and desserts for patients, cafeteria, and special catering.
  • Follows established standardized recipes for quality results and assures that serving time deadlines are met consistently.
  • Menu plans, reviews menus daily, and communicates with other cooks regarding supplies and preparation of ingredients.
  • Assists with checking food deliveries and processing invoices.
  • Inspects and assures that all items are accounted for, signs invoices, and submits to Dietary Office.
  • Attends appropriate meetings with Director and Dietitian.
  • Plans attendance to review progress and changes in food production.
  • Coordinates activities of staff in preparing and cooking foods for patients, staff, and visitors.
  • Makes recommendations for menu planning.
  • Inspects patient tray line and cafeteria line for appearance of menu items.
  • Assists in monitoring infection control and sanitation standards.
  • In the absence of the Food Service Team Leader/Cook, provides leadership in the department, consulting with the Clinical Dietitian as needed.
  • Assists in serving food on patients' tray line and assures that food plates are garnished appropriately.
  • Checks and secures all foods stored in freezer and refrigerator.
  • Conducts daily inspection and assures that food is properly wrapped, labeled, and dated; assists in planning for use of leftover foods.
  • Checks food inventory level in store room and submits food purchase requisitions to office.
  • Conducts food temperature checks each meal and submits daily report to office for review and filing.
  • Maintains sanitation in production area and complies with sanitation policies regarding work area and the cleaning of cooking equipment.

Requirements

  • High School education or GED preferred with the ability to read and write English to follow recipes and plan menus.
  • Five years of commercial food preparation experience is desired.
  • Ability to be courteous and cooperative with customers.
  • Ability to take criticism and accept responsibility while using good judgment when guidance is not readily available.
