About the position

The position involves preparing, cooking, and plating food in an attractive manner while adhering to local, state, and federal food safety guidelines. The role requires a working knowledge of food preparation techniques and terminology, as well as the ability to recognize the usage of raw food products and their impact on the final food product. Responsibilities include checking daily patient menus against current diet orders, collaborating with the VNA Registered Dietician, and maintaining knowledge of specialty menus and texture modifiers. The individual will also be responsible for planning and creating menus based on patient needs, preparing meals on demand, and ensuring the cleanliness and maintenance of the kitchen and serving areas.

Responsibilities

  • Prepare, cook, and plate food according to safety guidelines.
  • Demonstrate knowledge of food preparation techniques and terminology.
  • Check daily patient menus with current diet orders and collaborate with dieticians.
  • Maintain knowledge of specialty menus and texture modifiers.
  • Review census lists and create menus for food preparation.
  • Prepare meals and snacks tailored to patient requests.
  • Produce standardized recipes for easy replication by staff.
  • Plan meal preparation, delivery, and cleanup during weekends and holidays.
  • Set up trays with appropriate condiments and dishes.
  • Ensure cleanliness of the kitchen and serving area.
  • Wash dishes after each meal as needed.
  • Survey and restock necessary food items and maintain inventories.
  • Purchase necessary items in advance and monitor inventory.
  • Notify Clinical Manager of any kitchen anomalies affecting health.
  • Report malfunctioning equipment or patient complaints to managers.
  • Maintain compliance with budget and food service regulations.
  • Train and mentor per diem house assistants and volunteers.
  • Obtain and maintain ServSafe food service certification.
  • Provide service excellence to patients, families, and staff.

Requirements

  • High school diploma or equivalent.
  • 1-3 years' experience in commercial food preparation.
  • Ability to create and follow recipes, adjusting ingredient amounts as needed.

Nice-to-haves

  • ServSafe Food Safety Certification preferred.
