About the position

The Line Cook is responsible for preparing and keeping all grilled and heated food products fresh and at the proper temperature according to Rubio's guidelines. This role involves maintaining cleanliness to support a productive and profitable restaurant, ensuring product quality and presentation, portion control, speed and efficiency, and cleanliness. The Line Cook will work closely with the team to ensure good operations in the back-of-house (BOH).

Responsibilities

  • Responsible for product quality and presentation, properly preparing and holding grilled, fried, and heated products.
  • Manages portion control, restocking grill and fryer area, counting and weighing delivered items, and following recipe and product item builds.
  • Works with speed and efficiency to meet or exceed Rubio's service time standards by reading tickets and determining the proper amount of food to prepare.
  • Keeps the restaurant clean and maintains restaurant facilities and equipment as needed, including washing pots, pans, and utensils.
  • Follows all Company safety and security policies and procedures, maintaining proper temperature of food products and complying with health code regulations.
  • Communicates effectively with the Team to ensure good operations in the back-of-house.

Requirements

  • High school degree or equivalent combination of education and experience preferred.
  • Restaurant experience required; previous kitchen experience preferred but not required.
  • Knowledge of all aspects of back-of-house (BOH) restaurant operations.
  • Ability to read and write in either English or Spanish, and communicate operational concerns with Management and co-workers.
  • Overall skills and knowledge of mathematical principles and practices.
