About The Position

As a Kitchen Utility Porter at MGM Resorts International, you will play a crucial role in maintaining the cleanliness and organization of kitchen areas and equipment. This position involves various cleaning tasks, equipment maintenance, and compliance with health and safety regulations, ensuring a safe and efficient kitchen environment for staff and guests alike.

Requirements

  • 6+ months in a similar resort setting as a utility porter or restaurant steward.
  • Ability to work varied shifts and a flexible schedule (call times between 6PM-9PM).
  • Ability to lift and carry equipment up to 50 lbs.
  • Ability to be efficient, detail-oriented, flexible, and fast.

Responsibilities

  • Clean ceilings, walls, and items that may require lengthy periods of time on a ladder.
  • Deep clean hot holding or cooking equipment including charbroiler, griddle, salamander, and deep fryer.
  • Gather pots and pans to wash in a three-compartment sink or pot machine.
  • Breakdown, spray, load, unload dishes, glassware, and flatware as it is brought to the dish area.
  • Maintain chemical detergents and ensure proper cleaning procedures are followed.
  • Scrape, wash, rinse, sanitize, and air-dry pots and pans, placing them back in storage as needed.
  • Wash baseboards, floor drains, hand sinks, tables, and cutting boards.
  • Sweep and mop all floors and wash all floor mats.
  • Clean kitchen equipment including dish machines, ice machines, pot machines, prep tables, hot boxes, and refrigerators.
  • Separate and remove trash and garbage, placing it in designated containers, and handle biohazard clean up as necessary.
  • Maintain inventories of linen and remove soiled linen.
  • Transport equipment such as hot and cold boxes, speed racks, and push carts throughout the property.
  • Polish equipment as needed.
  • Comply with regulatory departments and departmental policies and procedures, including SNHD, OSHA, and Fire Department regulations.
  • Work on large electronic or gas-operated equipment such as ride-on floor scrubbers, pallet jacks, forklifts, and power washers.
  • Complete mandatory trainings, including health and safety as required by the company and governing entities.
  • Report equipment concerns to the direct supervisor.
