About the position

The Line Cook 2 position at El Encanto, A Belmond Hotel, involves preparing high-quality hot foods, including meats, fish, poultry, starches, and vegetables, while adhering to cleanliness, sanitation, and quality standards. Responsibilities

  • Prepare food items according to Belmond El Encanto standard recipes and/or as specified on guest check.
  • Set stations on time with the appropriate amount of food and supplies for the projected business and maintain cleanliness.
  • Remain knowledgeable of proper taste and presentation of all menu items, in all stations.
  • Ensure food production is to the highest standards.
  • Promote and practice standards of excellence and professionalism on the line.
  • Ensure consistency of product.
  • Close station including cleaning procedures.
  • Safely and properly clean and use equipment including personal knives.
  • Maintain cleanliness of kitchen and equipment.
  • Ensure all foods are stored properly: wrapped, labeled, and dated with expiration dates.
  • Follow established health and safety standards that comply with state, local, Food Safety, MSDS, OSHA and Health Department regulations.
  • Assist chefs with preparation of food for the Restaurant, Banquets, Pool, and In Room Dining.
  • Maintain a sense of urgency and work under pressure to meet deadlines.
  • Maintain a clean, neat and well-organized work area.
  • Produce food according to the ticket in a timely manner and in accordance with specifications.
  • Use utilities and resources in a responsible manner to control wastage.
  • Communicate relevant information to the department, your line manager and across departments, as appropriate.
  • Comply with safe working practices, Health and Safety policy and ensure accidents/defects are reported immediately.
  • Attend learning and development courses and complete eLearning modules, as required.
  • Demonstrate and be a role model of Belmond's core values of Care, Confidence, Curiosity and Community.

Requirements

  • Minimum of three years of previous experience, preferably in a luxury hotel setting.
  • Technical culinary program degree is a plus.
