About the position

The Line Cook/Dishwasher position at American Cruise Lines is a hybrid role that plays a crucial part in maintaining the galley and ensuring a high standard of food production for our guests. This position requires a dedicated individual who can seamlessly transition between cooking and dishwashing duties, depending on the needs of the fleet. The role is essential for providing an exceptional cruise experience, as it involves not only food preparation but also maintaining cleanliness and sanitation in the galley. The anticipated training for this position is set to begin in the Summer of 2024, aligning with the upcoming cruise season. As a Line Cook/Dishwasher, you will be responsible for the cleanliness and sanitation of the galley, which includes cutlery, glassware, dishes, and the surrounding areas. You will also be tasked with receiving and carrying food deliveries, which may involve lifting boxes weighing up to 50 lbs. It is essential to ensure that the commercial dishwasher operates efficiently, reporting any maintenance issues to management promptly. Building genuine relationships with guests and catering to their requests is a vital aspect of this role, as is working closely with the Executive Chef and Sous Chef to create diverse meals using fresh ingredients. Organizing your workload effectively is key to ensuring that kitchen processes run smoothly. You will be expected to produce high-quality dishes that adhere to established menu choices and recipes while accommodating guests' dietary requests. Maintaining order and discipline in the kitchen during work hours is crucial, as is prioritizing hygiene and food safety standards throughout all stages of food preparation. The goal is to prepare meals quickly and deliciously while enforcing food safety standards and maintaining effective communication with coworkers during meal services. Additionally, there may be opportunities for Crew Meal preparation and Café rotation, further diversifying your responsibilities.

Responsibilities

  • Responsible for the cleanliness and sanitation of the galley including cutlery, glassware, dishes, and surrounding areas.
  • Receive and carry food deliveries which require lifting boxes that weigh up to 50 lbs.
  • Ensure that the commercial dishwasher is operating properly and efficiently, reporting any maintenance issues to management.
  • Creating genuine relationships with our guests and catering to all galley requests in an efficient manner.
  • Work directly with the Executive Chef/Sous Chef to produce diversified meals for our guests based off of the fresh ingredients.
  • Organize your workload in the kitchen so that kitchen processes run efficiently.
  • Produce high-quality dishes that follow up the established menu choices and recipes.
  • Adhere to all the guests' dietary requests.
  • Maintain order and discipline in the kitchen during work hours.
  • Ensure that hygiene and food safety standards are placed as a top priority throughout all stages of food preparation.
  • Ensure that all meals are prepared as quickly and deliciously as possible.
  • Enforce food and safety standards.
  • Communication with coworkers is imperative to all meal services.
  • Possible Crew Meal preparation and Café rotation.

Requirements

  • Ability to work around 14 hours per day.
  • Minimum 2 years of culinary experience in full-service resort, hotel, country club or full-service restaurant.
  • Familiar with food safety standards.
  • Ability to multi-task, take direction, and be a team player.
  • Ability to work with composure under pressure.
  • Possess problem solving skills, organizational skills, and self-motivation.
  • Ability to speak, read, and understand basic cooking recipes and adhere to directions.
  • An effective leader who can effectively control his/her time management.
  • Excellent oral communication and interpersonal skills.
  • Ability to pass a pre-employment drug test.
  • Ability to complete a criminal background check.
  • Transportation Worker Identification Credential (TWIC).
