About the position
Century Oak Packing Company is seeking a skilled and experienced Meat Cutter to join our team in red meat processing. This role focuses on preparing and cutting beef, pork, lamb, and goat for our customers, ensuring high-quality meat products are delivered. The position is non-customer facing and involves working in a casual and relaxed atmosphere.
Responsibilities
- Cut, trim, and portion different cuts of meat according to customer specifications
- Ensure proper labeling of meat products
- Maintain cleanliness and sanitation standards in the cutting area
- Follow food safety guidelines, regulations, and complete daily processing records
- Collaborate with other processing staff to ensure smooth operations between cutting room, grinding position, and packaging operations
Requirements
- Previous experience as a Meat Cutter or similar role in a USDA inspected or custom meat cutting industry setting
- Strong knowledge of meat cutting techniques and different cuts of meat
- Excellent knife skills and ability to handle sharp tools safely
- Attention to detail to ensure accurate portioning and packaging of meat products
- Knowledge of food safety regulations and ability to maintain cleanliness in the cutting area
- Ability to work in a fast-paced environment and handle multiple tasks simultaneously
