About the position

The Prep/Carver position at the Silverado-Franklin Historic Hotel & Gaming Complex involves providing excellent customer service while preparing and cooking a variety of foods in a fast-paced kitchen environment. The role requires adherence to food safety standards and the ability to work efficiently during busy service times, including breakfast and banquets.

Responsibilities

  • Give all customers prompt and courteous service.
  • Clean, cut, grill, cook, bake, roast, broil, steam, and fry foods to menu specifications.
  • Wash, peel, cut, and seed fruits and vegetables to prepare them for consumption.
  • Garnish platters, plates, and hotel pans per menu plan.
  • Stock steam tables and shams with food to par levels and ensure proper operation of equipment.
  • Perform simple food preparation tasks such as making sandwiches, carving meats, and brewing coffee.
  • Turn or stir foods to ensure even cooking and season food according to recipes.
  • Weigh, measure, and mix ingredients according to recipes or personal judgment, using various kitchen utensils and equipment.
  • Regulate temperature of ovens, broilers, grills, and roasters.
  • Wash pots, pans, dishes, utensils, and other cooking equipment.
  • Plan work during breakfast and banquets so that items served together are finished at the same time.
  • Clean cooking area, serving areas, equipment, kitchen appliances, and work areas to ensure safe, sanitary food-handling practices.
  • Observe and test foods to determine if they have been cooked sufficiently.
  • Compile and maintain records of food use, expenditures, and temperatures.
  • Work entire assigned shift on your feet, bending, stooping, and moving about the restaurant.
  • Use cooking equipment and tools effectively.
  • Acquire working knowledge of the Serve-Safe program.
  • Read and understand instructions for operating cooking equipment.
  • Lift up to 60 pounds and carry items as needed.
  • Sweep and mop floors to maintain safety and appearance of the cooking area.
  • Follow directions to ensure safe, sanitary food handling practices.

Requirements

  • Ability to provide prompt and courteous service to customers.
  • Experience in food preparation and cooking techniques.
  • Knowledge of safe food handling practices and the Serve-Safe program.
  • Ability to read and understand instructions for operating cooking equipment.
  • Physical stamina to work on feet for entire shift and perform tasks such as bending and lifting.
