This position is a BCTGM Local 19 union position. The Production Person is responsible for properly preparing, cooking, baking, and storing food items that are prepared in advance to establish consistent yields and food quality. The individual will prepare all food items and serve quality food to guests in a friendly and helpful manner, adhering to Parkhurst Dining recipes, standards, and procedures under strict sanitary conditions, following ServSafe and HAACP guidelines. Essential functions include preparing food according to Parkhurst recipes and enforcing the batch cooking method. The Production Person must ensure the quality of the food produced and maintain the quality and quantity of food throughout the service period, utilizing production sheets. Responsibilities also include cutting, weighing, and preparing food items following company procedures and recipes, as well as rotating refrigerated and dry goods in accordance with company-approved policies, always using the FIFO method. The role requires maintaining proper temperatures for all foods and coolers and freezers, wrapping, labeling, dating, and storing all food items properly to maintain freshness and quality under strict sanitary guidelines. The individual will complete product cooling charts, maintain a clean and neat appearance, and practice proper personal hygiene, including frequent hand washing. Daily production sheets must be completed, and all products must be distributed to the proper areas of service. The Production Person will maintain open communication with management regarding products and supplies needed, follow cleaning schedules, assist fellow employees, and perform any other duties as assigned by management. Additionally, the individual may assist in other kitchen areas when needed and asked by fellow employees and management.
