This position is a BCTGM Local 19 union position. The Production Person is responsible for properly preparing, cooking, baking, and storing food items that are prepared in advance to establish consistent yields and food quality. The individual will prepare all food items and serve quality food to guests in a friendly and helpful manner, adhering to Parkhurst Dining recipes, standards, and procedures under strict sanitary conditions, following ServSafe and HAACP guidelines. Essential functions include preparing food according to Parkhurst recipes and enforcing the batch cooking method. The Production Person must ensure the quality of the food produced and maintain the quality and quantity of food throughout the service period, utilizing production sheets. Responsibilities also include cutting, weighing, and preparing food items following company procedures and recipes, as well as rotating refrigerated and dry goods in accordance with company-approved policies, always using the FIFO method. The individual will maintain proper temperatures for all foods and coolers and freezers, wrap, label, date, and store all food items properly to maintain freshness and quality under strict sanitary guidelines. Completing product cooling charts, maintaining a clean and neat appearance, practicing proper personal hygiene, and frequently washing hands are also critical aspects of the role. The Production Person will complete daily production sheets, distribute all products to proper areas of service, and maintain an open line of communication with management regarding products and supplies needed. Following cleaning schedules as provided by management and assisting fellow employees to ensure guest satisfaction are also key responsibilities. Additional duties may be assigned by management, and the individual may assist in other kitchen areas when needed. The physical demands of this job include standing and/or walking 100% of the time, occasionally lifting up to 50 pounds, and frequently lifting up to and over 20 pounds.
