About the position

The Senior Catering Services Manager is responsible for overseeing all aspects of catering services at Table Mountain Casino Resort. This role involves daily interaction with clients, generating catering sales, managing events, and leading the catering staff. The manager creates a vision and actionable plans for special and customized events, ensuring high-quality service and client satisfaction.

Responsibilities

  • Maintain a well-organized catering facility and ensure proper controls are in place to protect all Table Mountain Casino property.
  • Ensure food service is prepared and delivered on time and meets quality and quantity standards.
  • Oversee event setup and breakdown, paying attention to client requests including themes and decorations.
  • Manage off-property catering events to exceed guest expectations.
  • Develop and maintain an exciting banquet program with innovative menus and stay updated on catering trends.
  • Calculate and manage event and menu item costs, assisting in managing all Food and Beverage areas as needed.
  • Staff, evaluate, recommend discipline, and schedule all Catering Team Members.
  • Attend or lead weekly BEO meetings to ensure accuracy in event planning and execution.
  • Complete ROI on events to ensure accuracy with Labor, COG's, and Expenses.
  • Schedule team members for appropriate coverage and service for events.
  • Experiment with new trends in menu formats and update offerings yearly.
  • Maintain punctuality in daily work times, appointments, and meetings.
  • Oversee service of group functions and be available for precon and postcon events.
  • Communicate expected delivery times to guests.
  • Deliver consistent quality in planning and execution of events.
  • Respond to opportunities, issues, and concerns with urgency.
  • Provide employees with recognition, direction, and support.
  • Report all accidents and injuries in a timely manner.
  • Take, place, and prepare catering orders and teach others to do so effectively.
  • Oversee the sales process for catering and/or conference services.
  • Keep work area neat and clean while following safety and sanitation procedures.
  • Maintain and improve service levels resulting in increased customer satisfaction.
  • Perform other duties as assigned.

Requirements

  • Bachelor's degree in Hospitality, Admin Business, or related field is preferred.
  • Five (5) years of experience in Catering Food and Beverage and guest service is required, preferably in a catering/banquet management capacity.
  • Five (5) years of supervisory or management experience is required.
  • ServSafe certification is required.
  • Excellent interpersonal, guest service, leadership, communication (verbal & written), analytical, decision-making, computer literacy, and problem-solving skills are required.
