About the position

Heritage Companies is seeking an Executive Sous Chef to join our culinary team at Hotel Chaco in Albuquerque, NM. This full-time position offers a starting salary of $60K, depending on experience, along with a comprehensive benefits package. The Executive Sous Chef will work closely under the direction of the Executive Chef, preparing signature dishes and ensuring that food is delivered to guests in a high-quality and timely manner. This role is crucial in maintaining the high standards of our culinary offerings and creating unforgettable dining experiences for our guests. In this position, the Executive Sous Chef will take on various responsibilities, including filling in for the Executive Chef in planning and directing food preparation and culinary activities. This includes estimating food requirements and managing food and labor costs. The Executive Sous Chef will also be responsible for supervising kitchen staff, including line cooks, prep cooks, and dishwashers, ensuring that all team members are effectively trained and performing their duties to the best of their abilities. The ideal candidate will maintain a positive and professional approach with coworkers and guests, communicate daily with kitchen leadership regarding job assignments, and uphold the company's food safety and sanitation standards. The Executive Sous Chef will also assist in menu design and preparation, produce high-quality plates, and ensure that the kitchen operates efficiently. This role requires a resourceful problem-solver who can handle any issues that arise in the kitchen and ensure that all food is prepared to meet Heritage quality standards.

Responsibilities

  • Prepare signature dishes under the direction of the Executive Chef.
  • Fill in for the Executive Chef in planning and directing food preparation and culinary activities.
  • Communicate daily with kitchen leadership regarding job assignments and required timeframe.
  • Maintain a high level of positive and professional approach with coworkers and guests.
  • Help in the preparation and design of menus.
  • Produce high-quality plates both in design and taste.
  • Willing to work a station during service when the Executive Chef is expediting.
  • Ensure that the kitchen operates in a timely way.
  • Resourcefully solve any issues that arise and seize control of any problematic situation.
  • Uphold company food safety, food handling, cleanliness, and sanitation requirements.
  • Order supplies to stock inventory appropriately.
  • Ensure that food comes out simultaneously, in high quality and in a timely fashion that meets Heritage quality standards.

Requirements

  • High school diploma or equivalent experience/training; four-year college degree in Hospitality preferred.
  • 2-3 years of kitchen management or equivalent combination of education and experience; luxury branded hospitality experience preferred.
  • New Mexico Food Handler Certification and ServSafe Manager Certification.
  • Ability to work on your feet in a humid kitchen environment for eight hours or more.
  • Must be able to lift/push/reach for/carry 30+ pounds frequently.
  • Excellent verbal communication and ability to multitask.
