About the position

The Food and Beverage Controller is a mid-level management position that plays a crucial role in the financial oversight of food and beverage operations within a resort environment. This position reports directly to the Director of Purchasing and is integral to supporting the leadership of the Purchasing team and department. The primary responsibilities include preparing and maintaining costings for all food menus in collaboration with the Director of Purchasing, the Culinary Team, and the Food and Beverage (F&B) Director. Additionally, the Controller will prepare and maintain recipes for all menu items in conjunction with the chefs, ensuring that all mixed drinks are also accurately costed and documented in collaboration with outlet managers and the F&B Director. The Controller will monitor and record the consumption of menu items each month, applying costings to produce menu potential reports that compare projected food and beverage costs against actual figures. This role requires the identification of opportunities to adjust prices, portions, and menus based on insights gained from monthly potential reviews. Spot checks of bar pars in all outlets and portion controls in kitchens will be conducted as time allows, ensuring adherence to the "no ticket no food" policy. Furthermore, the Controller will arrange and supervise all monthly food and beverage inventory counts in collaboration with the Director of Purchasing, Culinary Team, and F&B Director. Valuation of all monthly inventories based on current costs is essential, and this information must be provided promptly to the Controller. The position also involves producing month-end worksheets that detail monthly food and beverage cost of sales figures, investigating any inventory discrepancies, and working with chefs to track waste and improve kitchen controls. Ensuring that all food and beverage ordered by the resort is appropriately received, recorded, and stored is a critical responsibility, as is ensuring accurate recording in the General Ledger in conjunction with the Controller and Assistant Controller. The Controller will also oversee the correct recording of all food and beverage issued to the outlets and implement new food and beverage control systems as required. Ad hoc food and beverage control projects may also be assigned by the Controller or requested by the F&B Director or the Director of Purchasing.

Responsibilities

  • Prepare and maintain costings of all food menus in conjunction with the Director of Purchasing, Culinary Team, and F&B Director
  • Prepare and maintain recipes for all menu items in conjunction with the chefs
  • Prepare and maintain recipes and costings for all mixed drinks in conjunction with outlet managers and the F&B Director
  • Monitor and record numbers of menu items consumed each month, apply costings, and produce menu potential reports to compare to actual food and beverage costs
  • Identify opportunities to adjust prices, portions, and menus based on information gleaned from the monthly potentials review
  • Spot check bar pars in all outlets and pours controls, as time allows
  • Spot check portion control in kitchens and printed order tickets to ensure the 'no ticket no food' policy, as time allows
  • Arrange and supervise all monthly food and beverage inventory counts in conjunction with the Director of Purchasing, Culinary Team and F&B Director
  • Value all monthly inventories based on current costs and provide this information promptly to the Controller
  • Produce month end worksheets that provide monthly food and beverage cost of sales figures
  • Investigate any inventory shortfalls and overages, and excessive food and beverage costs
  • Work with the chefs to track waste and improve kitchen controls
  • Ensure that all food and beverage ordered by the Resort is appropriately received, recorded, and stored in conjunction with the distribution center manager, chefs, and outlet managers
  • Ensure that all food and beverage received by the Resort is recorded correctly in General Ledger in conjunction with the Controller and Assistant Controller
  • Ensure that all food and beverage issued to the outlets are correctly recorded in conjunction with the distribution center manager
  • Implement new food and beverage control systems as and when required/available
  • Ad hoc food and beverage control projects as directed by the Controller or requested by the F&B Director or the Director of Purchasing

Requirements

  • Must be authorized to work in the United States
  • At least two years of similar experience in a complex Resort environment
  • Ability to work positively and constructively with junior and senior colleagues
  • Resilience and positive attitude to challenges
  • Knowledge and experience with MS Excel spreadsheets: ChefTec, Oracle, SMS Touch, YellowDog, and Birch Street
  • Understanding and appreciation of cost/benefit relationships
  • Meticulous attention to detail
  • Able to lift, pull, and push up to 50 pounds
