The Food and Beverage Controller is a mid-level management position that plays a crucial role in the financial oversight of food and beverage operations within a resort environment. This position reports directly to the Director of Purchasing and is integral to supporting the leadership of the Purchasing team and department. The primary responsibilities include preparing and maintaining costings for all food menus in collaboration with the Director of Purchasing, the Culinary Team, and the Food and Beverage (F&B) Director. Additionally, the Controller will prepare and maintain recipes for all menu items in conjunction with the chefs, ensuring that all mixed drinks are also accurately costed and documented in collaboration with outlet managers and the F&B Director. The Controller will monitor and record the consumption of menu items each month, applying costings to produce menu potential reports that compare projected food and beverage costs against actual figures. This role requires the identification of opportunities to adjust prices, portions, and menus based on insights gained from monthly potential reviews. Spot checks of bar pars in all outlets and portion controls in kitchens will be conducted as time allows, ensuring adherence to the "no ticket no food" policy. Furthermore, the Controller will arrange and supervise all monthly food and beverage inventory counts in collaboration with the Director of Purchasing, Culinary Team, and F&B Director. Valuation of all monthly inventories based on current costs is essential, and this information must be provided promptly to the Controller. The position also involves producing month-end worksheets that detail monthly food and beverage cost of sales figures, investigating any inventory discrepancies, and working with chefs to track waste and improve kitchen controls. Ensuring that all food and beverage ordered by the resort is appropriately received, recorded, and stored is a critical responsibility, as is ensuring accurate recording in the General Ledger in conjunction with the Controller and Assistant Controller. The Controller will also oversee the correct recording of all food and beverage issued to the outlets and implement new food and beverage control systems as required. Ad hoc food and beverage control projects may also be assigned by the Controller or requested by the F&B Director or the Director of Purchasing.
